Pasta with aubergine, basil, chilli and pine nuts

Pasta is funny stuff. On the one hand, it's been the staple of student diets, in one form or another, for years. Often just served with grated cheese as it's cheap, filling and quick. At the other extreme, it's the lynchpin of the cuisine of an entire country where it can be covered in all sorts of over-priced shit, like truffles or caviar for fuck's sake. Yet another example of the gentrification of what has been a peasant food for centuries, a subject I've already ranted about.

Let's face it, pasta is usually nothing more than wheat and water, pressed into some fancy shapes. Obviously this belies the long culinary history of pasta. all the way from Italy. There are estimated to be over 350 varieties of pasta, many of which named after a dizzying array of things. Body parts seem a common theme with ears (orecchiette), tongues (linguine), moustaches (mostaccioli, another name for penne) all having pasta shapes named after them. Invertebrates get a bit of a look in too, with snails (lumache), squid (calamarata), worms (vermicelli) and butterflies (farfalle) all having a starring role. Then there is the really odd like bibs (bavette), cooking pots (lasagne) and thimbles (ditalini). Sadly there aren't any obviously rude official regional pasta varieties, as would fit the nature of this blog, though, as I pointed out previously, the word penne is just one "n" too many away from meaning penis. Then, I consulted everybody's friend Google and found that there is actually a dick-shaped pasta variety.

Anyway, moving back to the recipe in hand, when considering vegetarian dishes, pasta is a perfect base and the Italian love of fresh vegetables make for some delicious possibilities. This concoction is no exception and really is a cracking little recipe. Aubergines, garlic, chilli, basil and a few crunchy pine nuts mean it's stupidly simple and quick to put together. 

TIMING
Preparation: 5 minutes
Cooking: 30 minutes

INGREDIENTS
4 tbsp olive oil plus additional for pouring on
2 tbsp pine nuts
4 cloves of garlic, crushed
1 large aubergine (around 300g in size), chopped into 2cm dice
2 tbsp tomato puree
1 tsp dried chilli flakes
Salt and black pepper to taste
Handful of fresh basil leaves
150-200g dried pasta (penne or fusilli work)


RECIPE
Heat the oil in a large pan and throw in the pine nuts

Fry them for a couple of minutes, until they are golden brown before removing them with a slotted spoon

Add the garlic to the hot oil and fry for 2 minutes before adding the aubergine.

Fry for another 10-15 minutes until the aubergine pieces start to colour

Add the tomato puree, black pepper and salt to taste and continue to cook for another 10-15 minutes, adding the odd tablespoon of water if it gets too dry

Meanwhile, cook the pasta and drain.

Turn the pasta into the pan with the cooked aubergine, mix, and add the pine nuts.

Finally, tear the basil leaves and add to the pasta and aubergines and stir, adding additional olive oil to give the dish a glossy look.

Serve up with some nice crusty bread.



NOTES
Probably because my pedigree is more factory-made by Clarks in northern England than hand-made in Milan, I don't have much time for the whole idea that a certain shape of pasta must be served with a certain type of sauce. In this instance, the dried penne and fusilli I used (there was half a portion of fusilli left so had to add some penne from a new packet) held onto the sauce well. I've also served this with fresh tagliatelli and it works just as good.

The basil and pine nuts really make this dish. Dried basil is not a substitute for fresh leaves as the taste is very different. Pine nuts could possibly be swapped for other nuts, perhaps peanuts or cashews, but the dish will be missing the subtle coniferous fragrance that they impart.

One rare problem with pine nuts is pine mouth syndrome. This can happen after eating some pine nuts when, as I found out one time, you end up with a bitter taste in your mouth for a few days after eating the kernel. It does fade, but you don't enjoy your dinners for a few days as a result.

Contrary to urban myth, pasta was not brought to Italy by Marco Polo coming back from China, but by Arabs from North Africa. Is nothing sacred? Next thing you know they'll be claiming Arabs gave the world mathematics like algebra or made early advances in astronomy. Oh, wait, they did.

Southeast Asian Chicken Curry

Fussy eaters, what can you do about them? They make the chef's life difficult and the sweary chef's fucking difficult. I mean, we all have things that we're not keen on, sure. Personally, as I've told you previously, dear readers, I can't stand dried fruit as, to me they are the tagnuts from the devil's own pet rabbits. However, that's OK. They aren't in an awful lot of recipes, besides which, I do the cooking so you want raisins in, get your fucking own. The problems arise when someone doesn't like something that's a common ingredient in a lot of other things. Mrs Sweary has an aversion to butter, cheese in dishes (she'll eat "raw" cheese, go figure) and creamy sauces. This immediately wipes out half the cuisine of Western Europe as an option for dinner when I'm cooking for us. She's also ambivalent to curries containing a lot of coconut which also renders a lot of the fabulous curries from Thailand, Malaysia, Indonesia and Cambodia less than ideal. Sometimes a curry just needs a creamy texture to make it all the better, be it cream in something like a korma or the coconut in Thai red or green curries. Fortunately, Mrs S does like cashew nuts and they make a good alternative to coconut if they are blended into a paste. This curry has a smooth, creamy texture like you would find in a curry with coconut, but the nuttiness also lends it a flavour slightly reminiscent of satay.

While it's understandable that some people are a little bit fussy, the thing that really boils my piss is people that decide they can't eat a major food group as a fashion statement. Of course there are genuine clinical food intolerances and allergies (for example those with coeliac disease or lactose intolerance, which are real and often debilitating illnesses and my heart sincerely goes out to people who suffer with these afflictions), but there's always those people that say they can't eat bread or pasta because they are intolerant to wheat, or that milk makes them blow up like a balloon. The way they talk you might be forgiven for thinking that it was gluten and not polonium that had poisoned Alexander Litvinenko. Most of the time this aversion to a foodstuff is bullshit. Stop pathologising the fact that you're just a fucking fashionably fussy eater!

Anyway, back onto this recipe. This curry has a fresh, aromatic style like those from the various countries from SE Asia, though I think it's probably closest to a Sri Lankan dish. It serves 2 easily, with some left over for a lunch the next day if served with rice.

INGREDIENTS
Spice paste
1 thumb-sized piece of galangal, roughly chopped
1 small onion, roughly chopped
2 cloves garlic, roughly chopped
half a stalk of lemon grass, sliced
2 red chillies, roughly chopped
1 tbsp tomato puree

Dry spices
2 tsp ground coriander
2 tsp ground cumin
1 whole star anise
1 stick cinnamon (around 6 cm in length)
5 green cardamom pods
4 cloves
1 tsp ground turmeric
½ tsp ground black pepper
Salt
Spices on a plate again
From the top: ground tumeric, ground coriander, ground cumin, black pepper, salt, cinnamon stick, star anise, cardamom, cloves
2 tbsp oil
100g unsalted cashew nuts
20 (or so) curry leaves
I medium onion, sliced
1 medium-large aubergine, cut into 2cm cubes
4-6 chicken thighs, skinned
1 tsp garam masala

TIMING
Preparation: 10 to 20 minutes (depending on if you use a blender or a pestle and mortar)
Cooking: 90 to 120 minutes

RECIPE
Place all the paste ingredients into a mini food processor and whizz up until smooth. Alternatively, if you're a foodie wanker like me, put them into a pestle and mortar and pound crap out of them until they are a smooth paste.

 PASTE:
How low can you go?

Heat half the oil in a heavy pan and fry the cashews until golden brown, about 5 minutes or so.

Remove them with a slotted spoon.

To the hot oil add the dry spice ingredients for a minute, stirring.

Add the spice paste and stir for a couple of minutes.

Put the spice mix into a blender with the cashews and 500ml water.

Heat the remaining oil in the pan and fry the sliced onion until it's soft.

Add the blended sauce to the pan as well as the curry leaves and heat until bubbling.

Add the aubergine and the chicken, pushing the chicken into the pan so it's submerged in the sauce.

Leave to simmer for an hour to 90 minutes, stirring occasionally to make sure the chicken is cooked through.

Add teaspoon of garam masala just before serving to pep up the flavour a little.

Serve with rice, like the golden pilau in the pic below, and/or an Indian bread like a naan or paratha.


NOTES
This curry also works with lamb instead of chicken and, as I've alluded to, you could replace the cashew nuts with creamed coconut.

Galangal is a bit like a more fragrant version of ginger. If you can get it, fine, otherwise the curry doesn't lose much by using fresh ginger.

Curry leaves are another wanky foodie ingredient that aren't that easy to come by. You can find them in Asian grocers. Add a bay leaf instead if you can't get any.

Chilli chicken drumsticks with basil

Something that really pisses me off is when you get a recipe and try it out, following it to the letter, then it doesn't work or, worse, turns out to be crap. Often it's a recipe from a book from a really trendy chef, some currently hot restaurant or some newspaper column. You think "that sounds good, I'll give it a go" then you try it and you find the dough has the consistency of mayonnaise or the potatoes have the qualities of marbles or the chicken is still raw in the middle. It's the equivalent of really looking forward to a film and it turning out to be Batman and Robin. It's essentially epicurean premature ejaculation

I don't understand how this can be the case. The recipes must have been tested a few times before writing them up. Is it because the flour wasn't bought in the right pissing souk in Marrakech? Perhaps the aubergines weren't twatting organic enough? Maybe the cow was a fucking Capricorn and needed to be a Gemini. Who knows? Whatever the reason, it gets on my tits not being able to rely on a recipe from a respected and/or trendy source.

This recipe is a good example of this. The original version of this involved stir-frying the chicken drumsticks until cooked. It took ages and you can't tell exactly when the fucking things are cooked. On the plus side, it's a great way to start slimming, since salmonella will make the weight drop off you.

So I added the idea of having the drumsticks in the oven to part-cook them before adding them to the pan. It's a really easy recipe and tastes fantastic, despite having no really fancy ingredients, with the sauce being ready-made dipping chilli sauce.

INGREDIENTS
6-8 chicken drumsticks (depends on the size, enough for two people), skinned,
2-3 tbsp light soy sauce
Black pepper
1 tbsp cooking oil
3 cloves garlic, crushed
4 or 5 spring onion diagonally cut into 5cm lengths
2 assorted peppers of any colour (though at least one should be a sweeter re/orange or yellow one), cut into thin strips
1carrot cut into matchsticks
3 tbsp sweet chilli dipping sauce
1 tbsp dry sherry
pinch dried chilli flakes
handful of fresh basil leaves (20 or so)

RECIPE
Make deep slashes diagonal to the bone in the drumsticks

Put them in a bowl and add the light soy and black pepper

Using a basting brush, coat the drumsticks well with the soy and pepper working it into the cuts

Cover, place in the fridge and allow to marinate a couple of hours or so

 To marinate

Heat the oven to 200 and cook the drumsticks for 10minutes.

Heat the oil in a wok and add the part-cooked drumsticks and gently cook them over 20 minutes, constantly keeping them moving.

Cut into one of the drumsticks to ensure it's cooked through.

Add the garlic, spring onions, peppers, chilli flakes and carrot and keep stirring for another 5 minutes until the vegetables are tender.

Add the chilli sauce and sherry and allow to heat until bubbling while coating the ingredients.

Stir in the basil leaves just before serving

Serve with rice, preferably egg-fried.


NOTES
I don't know what nationality this is supposed to be. Thai? Chinese? Whatever, the basil adds a really different twist to your usual stir fries.

Another deviation I do in this from the original is that demands you deep fry the basil leaves before adding them to the dish at the end. I'm too mean to waste the oil this requires, and it tastes just as good

The marination of chicken in soy sauce and pepper really adds some flavour to what would otherwise be fairly bland chicken. I do this any time I do a Chinese chicken dish, as was the case on my chicken chow mein. It's great for any old bog-standard stir fry.

Leftover symphonies 2: Broccoli and Stilton Soup

Who first thought the idea of eating some rotten milk that had putrefied so far as to be actually mouldy was actually a good idea? I mean, eggs are a pretty dodgy concept when you think it just came out of a hen's arse, but at least they are in a shell you get the edible part out of. But, blue cheese, it's just there, all veiny and smelling like a tramp's underpants in the middle of a heatwave. Whoever it was, he or she was definitely onto something as it tastes fantastic. And probably the best of all blue cheeses is Stilton

I know Stilton has its haters, but there are worse forms of cheese. Take Casu Marzu, for example. This cheese from Sardinia has actual live maggots in it. Thinking that you might try the cheese with the blue mould on it is one thing, but to actually have an internal monologue saying "You know what this cheese needs? Maggots who've been pre-eating the cheese" really is overstepping the mark. The taste of this monstrosity apparently lingers with you for hours. I've not actually eaten Casu Marzu, but I hazard to guess that even this aberration of putrid milk, complete with maggots, still tastes better than Cheese Strings. Young Master Sweary would probably eat shit if you sprinkled it with chocolate, but even he won't touch Cheese Strings and, having tasted them myself, I can understand why. They are truly fucking diabolical.

Though it's in the shops all year round, Stilton in the UK is really only promoted to sell at Christmas. Indeed, most people who eat it only have it in the festive period when it accompanies crackers after a stomach-rupturing Christmas dinner as the Queen delivers her message to the Commonwealth. The nature of the extravagant feast of Christmas means that there is invariably a mountain of food left over, most of it perishable. This includes a pyramid's worth of cheese which presents the dilemma of what to do with what's left before it goes completely off. Stilton probably doesn't lend itself to using up in sandwiches, besides which there is usually the remains of a large turkey to consume which is best in sandwiches (as well as the obligatory turkey curry, which is another recipe in the pipeline to post at a later date). This soup is ideal to dispose of, not only the large block of blue cheese that needs to be consumed, but also the remains of the broccoli that is likely to be festering in the salad bowl of the fridges. This pleases me greatly since, when it comes to food, I really fucking hate throwing good stuff out. Better still if it makes something like this classy soup that gave me three or four good lunches at work the following week.

This soup, despite being made from leftovers, really is fantastic.The subtle blue cheese and broccoli go together so well and it beats anything you can buy in a tin.

INGREDIENTS
1 tbsp olive oil 
1 onion chopped
1 clove garlic, crushed
1 carrot, diced
1 stick celery
1 potato, diced
1.2 litres water
2 vegetable stock cubes
100g Stilton, crumbled
300g broccoli, cut into chunks, including stalk
Black pepper

"SMELL MY CHEESE, YOU MOTHER!"


RECIPE
Heat the olive oil in a pan and add the garlic and onion to gently sauté for 10 minutes or so.

Add the potato, carrot and celery and carry on cooking for another 15 minutes.

Add the water and stock cubes and throw in the stalk pieces of the broccoli.

Bring to the boil and gently simmer for 15-20 minutes then add the broccoli florets.

Simmer for another 10 minutes then scatter in the Stilton and add black pepper to taste.

Allow the stilton to melt into the soup then liquidise until smooth, or leave it a little chunky if you prefer.


I took this to work to have as lunch. You could serve it as a starter, maybe. Serve it however you want to, I'm not your Mum. It is great with some crusty bread, though.

NOTES
You could add to the richness of this soup by adding a slug of cream (again, a common thing to use up after the Christmas binge). A good nip of sherry would also be a good idea.

To liquidise, use a hand blender or put the soup in an upright blender. However, if it is an upright the soup might have to be cooled if the jug is plastic and also it might spray all over the kitchen and could give you a broccoli and Stilton face peel if you don't close the lid properly. I don't know, as I said above, I'm not your Mum. Figure out how to use your own kitchen equipment for yourself.

This recipe is a rare event for this blog in that it includes cheese in it, and blue cheese at that. The recipes I usually post are things I make for my family and Mrs Sweary doesn't eat anything containing cheese or with a creamy sauce (yeah, yeah, go on with that line of thought and its eventual outcome yourself). I knocked this up for my own benefit to bring to work for lunch from Christmas leftovers before they needed to be chucked out.

I appreciate the irony of this is a way to use up Stilton before it goes off since it is, by pretty much any definition you care to look at, already off.

Leftover symphonies 1: Lamb in garlic, tomatoes and white wine

I've slated my parents' cooking skills while I was growing up in several previous posts and I've also had a significant go at the British contribution to world cuisine. However there is one thing that puts we Brits on the throne of cooking, at least once a week: the Sunday roast.

I was raised on a Sunday roast every week, be it chicken, beef, pork, lamb. It was the diamond in the dust of what was otherwise domestic culinary mediocrity. It's very much a British thing which really can't be beaten and it's simplicity means you have to try quite hard to fuck this up. If not the absolute pinnacle of cuisine, it's certainly one of its munroes. Tender, melt-in-the-mouth slivers of meat, roast potatoes, a couple of gently cooked vegies, all caressed in rich gravy and a whisper of the right condiment (mint sauce, horseradish, apple etc), maybe with Yorkshire pudding and or a nice stuffing (and everyone knows nothing's better than a good old fashioned stuffing. Well, unless you fancy a good, hard shag). More than any other facet of weekend life, it lessens the impending blow of the working week that you know is heading your way, like the proverbial shit towards the fan, to scatters the last of your weekend comfort into the air when the alarm clock goes off 15 hours later.

As utterly wonderous as the Sunday roast is, I truly fucking hate the leftovers. The cold, roast meat that was a common meal in my household for dinner on Monday, accompanied by chips (fucking chips) and something like baked beans. That once delicate, silken-textured meat has, in the fridge overnight, become some sort of tough, greasy, stringy-textured secondhand chewing gum, akin to freshly lubed shoe leather. It's such a crime to do this with a lovely cut of meat, because those wonderful leftovers could still be used for something nice. It cost enough, why not get yet another decent additional meal out of it? I have tried a few recipes for leftover roast meat in the past and most of them have been, quite frankly, a bit shit. Then we came across this wonderful way to make your leftover lamb almost as nice as the first time out. It's a Spanish dish and I've raved about my love of Spain and its food in the past, and the flavours in this recipe are as Spanish as you can get with all that garlic, the tomatoes and olives.

TIMING
Preparation: 15 minutes (not including the roasting of the original lamb, obviously)
Cooking: 40 minutes

INGREDIENTS
Cooked, leftover roast lamb, trimmed of any excess fat and cut into bite-sized chunks (ideally about 400g for two people)
Plain flour for dusting
2 tbsp olive oil
1 medium onion, finely chopped
4 good-sized cloves of garlic, crushed
3 medium-sized tomatoes, peeled and roughly chopped (around 400g, or use tinned if out of season)
1 tbsp tomato puree
100ml white wine
Salt and pepper to taste
50g pitted green olives (about 25 actual olives in total), drained

The basic ingedients: white wine, tomateos, onion, garlicand the floured roast lamb
RECIPE
Dust the lamb with the flour and a good grind of black pepper to lightly coat.

Heat the oil in a pan and fry the lamb until it gets a nice golden brown.

Remove it with a slotted spoon to leave the oil behind.

Add the onion and garlic, adding more oil if the pan is too dry.

Fry for 5-10 minutes, so the onions are transparent.

Add the tomatoes and allow them to break down over a gentle heat for 10-15 minutes.

Stir in the white wine and tomato puree.

Bring to a low simmer and cover for 10 minutes.

Return the lamb to the pan and stir in to allow it to heat through.

Before serving throw in the olives and mix.

Serve with sauteed or oven-baked potatoes and bread to mop up the sauce.

In the pan

NOTES
A decent cut of roast lamb would usually be leg or shoulder. Leg is better as a roast with shoulder usually fattier, though this does add flavour. Either one is good in this dish, but the fattier shoulder probably works better.

The wine cuts through the greasiness as well as tasting great.

Don't skimp on the oil for the first part of frying the lamb as a lot of the rehabilitation of previously roasted meat in this recipe is in the frying part. This also goes for the garlic, you can't use too much garlic. Ever.

Plain olives work in this though I like pimento stuffed ones. These are not to be confused with Olive from On the Buses.

Potato Gregg's Last Stand: Tandoori style potato curry

All good things come to an end and so do potatoes bearing vague resemblance to celebrity greengrocers, so it's time to make him useful. Well, I couldn't let him just putrefy into a mouldy, slimy mess, could I? It would do him a disservice to make something boring with him so I decided to make this great curry. It's what he would have wanted.

Really, the potato is taken for granted, especially in the UK. Chips (and I did mention the British obsession with the fucking chip previously), mash and the horrendously bland, plain boiled old potatoes were the accompaniment to much of the nutrition in my formative years. I mean chips are OK and mash is great if made right (it rarely was back then), but the plain boiled potatoes were just so fucking bland. Serving them up like that is just such a waste of a really versatile vegetable. Let me count the ways. There are crisps which come close to the very zenith of the art of potato cookery, but nobody I know makes their own crisps. You can have them baked, sauteed, roasted, or get exotic and go for something like hasselback, duchess, dauphinoise and, let's face it, you know if it's got a French name it's going to have a good 50% extra on the price in a lot of restaurants. Alternatively, incorporate your spuds in a stew or casserole for them to braise and they not only absorb the flavour of what they're cooking in, but actually enhance it.

There is a lot of bad press about potatoes as being full of carbohydrate and therefore amongst certain healthy/faddy diet circles (yes, adherents to the Paleolithic diet, I'm looking at you as I mentioned previously, you gullible twats) they rank up there with the jism of Satan himself as a food to avoid. However, it's a little known fact that potatoes, before the global transport network and advances in cultivation made pretty much every vegetable available all year round, were one of the major sources of vitamin C in gloomy Northern Europe in the winter months. Indeed, there is actually more vitamin C in a packet of salt and vinegar crisps than in a fresh apple. Well, I say there is, but I've not checked that fact so it might be bollocks.

Thing is, potatoes are just so fucking versatile and one of the best ways to use them is in curries where they can be a main ingredient in their own right.

INGREDIENTS
½ tsp ground tumeric
½ tsp onion seeds
1 tsp cumin seeds
1 tsp mustard seeds
1 tsp tandoori spice
½ tsp paprika
½ tsp salt
pinch chilli flakes
1 small onion, sliced
2 large cloves garlic, crushed
400g peeled potatoes in 2cm cubes
300ml water
100g fresh tomatoes, peeled
2 tbsp vegetable oil 



RECIPE
Heat the oil in a heavy pan and fry the spices for a minute. Throw in the onion and garlic and cook until the onion is transparent, stirring frequently.

Add the potatoes and keep stirring for 10 minutes to par-cook them and give them a nice coating of spice mix. Add the tomatoes, stir and cook for another couple of minutes before adding the water.

Bring the pan to the boil, cover and leave to cook for twenty to thirty minutes, when the potato should be tender.


This is plenty for three or four people as an accompaniment to another curry, or is substantial enough to be served on its own with rice and/or bread. Like most curries, any leftovers taste better as lunch the next day

This is yet another vegetarian/vegan dish. It's great on its own but it makes a great part of a thali along with some of my other vegie curries and accompaniments like baingan tamatar and butternut squash curry.

I made this with old potatoes in this instance, but making it with new potatoes also works really well.

Stuffat Tal-Fenek, Maltese rabbit stew

First of all, I've decided that all this cooking malarkey is a difficult job to do on my own so I could do with a hand. Please allow me to introduce  my new assistant, Potato Gregg. He's a potato who happens to bear a fleeting resemblance to Cockney reformed football hooligan-cum-modern day greengrocer Gregg Wallace. Potato Gregg will be assisting in my preparation and chipping in to this blog with snippets of wisdom and culinary tips.

Indeed he doesn't, Potato Gregg. Let's get on with the recipe, shall we?

Despite them being a widespread pest because they breed, well, like rabbits, we don't do much with rabbit in this country. No, because we're a nation of "animal lovers" and the little bunnies are just so cute. I mean, so are lambs, calves and piglets but they don't usually live in your garden (well, unless you're a farmer or small-holder) or indeed your living room (well, unless you get off on that sort of thing) before you eat them. And let's not forget the place of the rabbit in our culture: Peter Rabbit, Bugs Bunny, Brer Rabbit, Watership Down. Then again there's also Frank from Donnie Darko.

Actually, Potato Gregg, I beg to differ. You forget the Rabbit of Caerbannog from Monty Python and the Holy Grail (see clip below) which was far scarier. That rabbit actually brutally murdered people while Frank was merely ominous and looked a bit iffy. Besides, he was clearly a man in a rabbit suit, looking more like Harvey after he left his head too close to the radiator overnight.

All this preamble aside, the point is that rabbit is a fantastic meat: lean, tasty and cheap. It takes a bit of cooking to ensure it's not to tough. It tastes a lot like chicken although this is the description that applies to pretty much any meat when trying to tell other people what it's like. You do wonder what the first person to eat chicken said it tasted like when telling other people how great this new bird that they'd just barbecued was.

TIMING
Preparation: 30 minutes plus marination (overnight if possible)
Cooking: 3-plus hours on the hob (you could put it in the oven for the same time at 160°C or even do this in a slow cooker)

INGREDIENTS
1 gutted rabbit, cut into 6 or 8 portions
400 ml red wine
4 or 5 bay leaves
1/2 tsp black pepper
4 cloves of garlic, crushed
1 carrot, sliced
1 large onion, chopped
1 stick of celery, finely chopped
1 tin of tomatoes
1 tbsp tomato puree
3-400g potatoes, peeled and cut into bite-sized chunks

RECIPE
Mix the wine, garlic, bay leaves and black pepper in a dish. Mix well and add the rabbit. Cover, stick it in the fridge and marinate for a good few hours, ideally overnight or as long as possible otherwise.

Marinating

Heat the oil in a heavy pan and brown the rabbit pieces on all sides, reserving the marinade.

Remove the rabbit with a slotted spoon and put on a plate

Throw the onion and celery into the pan and saute until the onion is cooked. Add the carrot, tomatoes, tomato puree and the reserved marinade.

Heat to a simmer for about10 minutes or so to break down the tomatoes a little

Put in the potatoes and mix well then return the rabbit pieces to the pot

Cover and turn down the heat to a gentle simmer for 3 hours or more.

Ready to serve

Serve with bread to mop up the rich sauce. The meat should be falling off the bone

NOTES
This recipe is the national dish of Malta. I've never been to this archipelago in the middle of the Mediterranean Sea (not yet, anyway, but it's on my list). I find it surprising that the national dish isn't some sort of seafood, given that it's a collection of small islands where you are never more than a few miles from the sea. Mind you, as a former British colony, maybe, along with the red post boxes, there's an element of British influence in the non-use of easily-obtained fish, as is the case with Brits (and as mentioned, nay ranted on, in a previous blog entry)

I'd expect the rabbit would be prepared by your butcher, but in principle you could make this with something you caught yourself or even roadkill if you're that way inclined. The rabbit I used was cleaned and portioned, but did have its various other organs like liver, kidneys, etc which I kept to enrich the sauce. It was bloody cheap as well at £4 to make a meal sufficient for 4 or more people. Parochial reference again, but I bought it at my favourite butcher, Allums of Wakefield.

If you are bothered about eating something so cute there are two things to think about making them less cute. 1: they are coprophagic and 2: they are, for all intents and purposes, just long-eared, grass-fed rats. Actually, these points may not make actually rabbits more appetising to eat, but at least you can look at them as less cuddly

This dish is called stuffat tal fenek and I've not made one double entendre out of that first word. I'm clearly losing my touch.
Like most stews, the recipe needs to cook long and slow, or else the rabbit would be stringy and chewy.

Baingan Tamatar (aubergine and tomato curry)

Aubergines are funny things. They're called eggplants in the States, apparently because the first ones that Europeans saw were like the little white ones in the picture below. You do wonder though if they may have got a different name if they'd first seen one of the others, like a purple and white stripy arse plant (far right), or a deep violet penis fruit (do I need to point that fucker out?). I should stress that the latter ought not to be confused with a penis gourd.

And what of other vegetables if they had been named after what they look like? I've already alluded to the sex toy appearance of the butternut squash and the phallic appearance of the courgette in previous recipes (to paraphrase the title of my own blog, it's not big, but it is funny). Would we find the "goth carrot" (parsnip); the "leafy stinking football" (cabbage) or the "You wouldn't want one of them up your arse" (artichoke) quite so appetising?

Of course, we Brits, being proudly European (apart from those of the UKIP persuasion), name them aubergine from the French word for the vegetable which is derived from in turn from Arabic al badinjan which itself comes from the Sanskrit vatimgana which is also the root of the Hindi word for aubergine, baingan, the title of the recipe.

All this linguistic nerdism is well and good, but the word aubergine does sound uncomfortably close to the French word for an inn, auberge, which spawned the Chris Rea song below and I'm not entirely sure that can be forgiven.


Whatever you want to call it, the aubergine is a fantastic vegetable. It is often thing of beauty with its vivid colour. It's also substantial enough to make the basis of a good main course dish in its own right, tastes great, and works really well in curries like this one. As I've said before, I've got a lot of respect for vegetarians and a great vegetarian dinner is all the better for the smug satisfaction you get in the knowledge that it didn't have any dead animal in it (at least, none that you knew about. I mean, there's no accounting for the odd fly or spider that made its home somewhere in the ingredients). This makes a decent main course for a couple of people with rice and/or a nice Indian bread.

INGREDIENTS
2 tbsp vegetable oil
1 big onions, sliced
3 cloves garlic, crushed
1bay leaf
~10cm piece cinnamon
2 tsp whole coriander seeds
1 tsp onion seeds
1 tsp ground black pepper
4 cloves
pinch chilli flakes
1 tsp salt
1 good sized aubergine (about 3-400g worth if you use smaller ones), topped, tailed and cut into 2cm cubes
1 tin of tomatoes (ideally chopped)
200ml water
1 tsp garam masala




RECIPE
Heat the oil in a nice, solid pan and add the spices.

Fry for a minute then add the onion and garlic and sautee gently to soften.

Add the tomatoes and aubergines and stir well.

Add the water, bring to the boil and simmer.



Leave for at least half an hour, until the aubergine is tender.

Add the garam masala and stir well.

Taste and add more salt if it's needed.


Serve it on its own with rice and/or naan bread or with other accompaniments.

NOTES
Vegetable oil should be neutrally flavoured, like sunflower or rapeseed.

About 30% of the population of India are vegetarian. This amounts to over 350,000,000 people, over five times the entire population of the UK. It's therefore not surprising that probably the best vegetarian food in the world is from India, like this dish. I've got a few more great veggie curries up my sleeve for later blog entries.

I've mentioned before that aubergines are part of the nightshade family, also including tomatoes, peppers and potatoes. We could survive without these plants (in Europe we actually did without most of them before Columbus), but food would be so ridiculously dull.

Garam masala is a mixture of aromatic spices that pep up the flavour of a curry that might be lost during the cooking process.

Bruschetta

It's a Sweary Brucie-Bonus!

Bruce Forsyth
is a showbiz legend in the UK. He's also older than God's dad. Despite his advanced years, until a couple of years back he was still presenting Strictly Come Dancing on the BBC. He's most famous for his shit jokes and godawful catchphrases involving audience participation, though nowadays you can't help thinking that he uses the audience to help remember what he's supposed to be saying. The reason I mention him is so he cannot be confused with the subject of this blog entry, the wonderful Italian starter bruschetta.

First thing's first, this is how it's pronounced:

Bruschetta (or this version, at any rate) is basically an open tomato sandwich on toasted bread. This description really doesn't do justice to the dish, and it's a bit like describing a blowjob as a moist wank. The combination of the toasted bread, fresh tomatoes, olive oil garlic and fresh basil is fantastic.

INGREDIENTS
1 loaf of fresh bread (French baguette or ciabatta)
1 large clove of garlic
Good olive oil (extra virgin)
100g ripe tomatoes, roughly chopped
Small handful of fresh basil leaves
Black pepper

RECIPE
Slice the bread diagonally to give plenty of area to put the rest of the ingredients on and toast the bread on both sides.

Rub the clove of garlic on the toasted bread then crush what's left.

Gently fry the crushed garlic in some olive oil for a couple of minutes and set aside

Pile the chopped tomatoes on the bread

Liberally drizzle olive oil on the bread and tomatoes

Tear the basil leaves roughly and scatter them on top of the bruschetta

Pour the fried garlic and oil over then grind plenty of black pepper and serve it up.

This amount of tomatoes is enough to make four decent-sized slices which is a good starter for two or something smaller for four. It makes a great starter with something like my recently posted ham and mushroom pasta dish


NOTES
This recipe lives or dies on the quality of its ingredients. It needs fresh bread; fresh, ripe tomatoes; a decent quality, fruity olive oil and fresh basil.

You can toast the bread in a toaster. On the other hand, you can make it look good by the art of food wankerie and doing it in a hot, dry griddle pan. Being of the epicurean onanistic persuasion, I used the griddle pan method

As I said above, the tomatoes need to be nice and ripe and quite soft. To be honest, this recipe is best made in the summer when tomatoes have the most flavour. If it's out of season, at least look for the reddest and most fragrant tomatoes you can get.

Pasta with ham and mushrooms

Time for a sweary confession. It's hopefully obvious from this blog that I really love food and, more, that I'm fairly discerning about what I eat. I believe that great meals need good quality ingredients. All this is true, but I absolutely fucking adore pork scratchings. Pig rind, pork crackling, pork crunch, call it what you will, but in my opinion scratchings are the food of the fucking gods. Quite honestly, to me, scratchings are the ambrosia (no, not the rice pudding, you knob) to the nectar (no, not the loyalty scheme, you knob) that is beer. I would live on them if I could, though you would definitely be well advised to stand upwind of me if I did as they do not make a pleasantly aromatic bedfellow with my gut microflora.

I'm so much of a scratchings nerd it's often the second thing I look for in a new pub, after what beer they do. The most exotic of these was when I was getting pissed on San Miguel (Filippino version, not the Spanish version. They are supposed to be the same but they taste very different) it is in a small beach bar in Manila (in a street, not on a beach). They had vendors coming round to sell all sorts of weird things including knock-off watches, knock-off viagra (at least I assume it was knock-off) and even live snakes. Then a guy appeared who was selling actual pork scratchings which were fantastic. Of course, scratchings are also quite possibly the very worst thing you can actually eat: thick with fat, caked in salt and can shatter your teeth if you get bad batch. And don't even get me started on the smell that literally farts from the bag when you open it. Negative points aside, the point of all this is that, with all due respect to my vegetarian, Muslim and Jewish friends, surely pigs are meant to be eaten if even their packaging tastes so fantastic.

Obviously, there is far more to (from?) the pig than scratchings. There is a phrase from Spain saying they use "everything but the squeal" from the pig, (which is also the title of a book by a British expat living in Galicia), in that pretty much the entire animal is used in some way. If you think about it, there are a multitude of things derived from the original pig. Scratchings I've already mentioned, then there's bacon, sausages of various types, uncured pork meat in various forms, a whole anatomy of offal and even the blood in the form of blackpudding. There are less "meaty" products like lard and suet, then there are other uses for pigskin as leather and gelatine. Let's also not forget a wealth of medical uses: porcine insulin is used in treating diabetics and pig skin can be used to make dressings to treat burns patients. Pig products even find their way into cosmetics

I couldn't do a comedy/cookery blog mentioning Spam and not put this, could I?

One of the greatest product of the pig is ham. Like any food, ham can vary from the sublime, like Jamon Iberico from Spain, to the revolting, like tinned spiced ham otherwise known as Spam (so bad they named nuisance e-mail after it). In fairness, Spam is not a good representation of actual ham since it is at least partially mechanically recovered meat and not entirely pig in origin. Generally, real ham tastes good however much you pay for it.This is especially true if you intend to use it in a recipe like this rather than stick it in a sandwich. True, cheaper versions are pumped full of water so you're getting less meat per penny, but the flavour should still be there which, for the purposes of this recipe, is all you need.

This is yet another cheap, quick and easy meal. These factors are all well and good, and they form a bit of a theme in many of my blog entries. The most important thing, however is that this dish really tastes fucking fantastic which is a more prominent theme I hope runs through every single one of my recipes.

INGREDIENTS
1 tbsp olive oil
1/2 red onion, finely chopped
3 cloves of garlic, crushed
100g chestnut mushrooms roughly chopped
150g cooked ham, roughly chopped (smoked if you prefer)
pinch of fennel seeds
pinch of mixed herbs
dash of lemon juice
1/2 a vegetable stock cube
100ml red wine
100ml pasata
Black pepper
All ready to cook
From 9 o'clock: ham, mushrooms, garlic, red onion

RECIPE
Heat the oil in a good heavy pan and add the onion and garlic.
Slowly cook the onion for 5-10 minutes then throw in the mushrooms.

Keep sauteing until they are cooked and add the ham to warm through.

Add the fennel seeds, herbs and lemon juice before crumbling in the half stock cube.

Pour in the wine and pasata and stir well, adding freshly ground black pepper. Leave to simmer for 5-10 minutes.

Serve on pasta. Tagliatelle works quite well

NOTES
You can use smoked or regular ham. The tastes are different but both make a great dish.

For the version I took photos of for this recipe I used a cheap off-cuts pack of smoked ham from my local super market. It's not going in a sandwich and you're chopping it up so the original form doesn't matter too much and this was also quite cheap.You could use panchetta if you were feeling particularly foodie wankerish but it is a little over-powering in this dish.

I'm glossing over the recent WHO report naming  processed meat products such as ham as carcinogenic.

Yet again I need to point out that, while my regular blog guest star, Rick Stein, may mention being somewhere exotic like the Philippines in his painfully meandering stories, he probably wouldn't be talking about getting rat-arsed on cheap local beer and being offered drugs to give you a prolonged stiffy, or indeed pork scratchings. Sweary Chef wins again.

Mince wonder part 3: Bolognaise

It was only a matter of time before I got round to posting my version of this old kitchen standard and it's yet another addition to my array of mince wonders following chilli con carne and shepherds' pie. Mince doesn't cost a lot and can also be replaced by veggie mince if necessary, making it flesh-dodger friendly, so this dish is really versatile, tasty and cheap. It's the ultimate student/laddish meal but nice enough for a more sedate dinner with polite company.

It's a cliché to refer to the 1970s as the decade that style forgot, but this isn't really fair. Sure, the fashion was largely pretty ludicrous, but this was also the decade that gave us punk and decimalisation. It's also the time when we Brits started to look to our new European chums for food and style tips. These aspirations to European cool may have left a lot to be desired by today's standards, but then again, you do need to learn to shit in a potty before you can use the toilet.

In the 1970s spaghetti bolognaise was the absolute fucking zenith of continental sophistication. In fact this dish is so 70s you could put a droopy moustache on it and call it Peter Wyngarde. I know it's easy to scoff with the benefit of hindsight, but its competition in terms of continental sophistication at the time included crème caramel in plastic potsColman's Beef Bourgignon ready-made sauce mix in a sachet; and Blue fucking Nun Liebfraumilch German white wine, so it won hands down on being something that tasted nice.

Anything from mainland Europe was considered stylish. Even British cars of the time had an aura of continental mystique about them with names like Allegro, Cortina and Capri. This was, of course, long before our era of Easyjet and Ryanair flights, the Channel Tunnel and the EU. This was an age when these places across the Channel in Europe were exotic and sophisticated. They were separated from us by water, they were "other". These countries were so exotic you needed visas to enter them, so sophisticated that you could get ameobic dysentery from merely looking at a glass of the local tap water (or so travel advice of the time would lead you to believe).

Europe had an edge, it seemed a dangerous place. There was often a pervading mistrust of Germany from those who had lived through WWII. France ate funny-shaped bread, molluscs and amphibians. Spain was just recovering from being under a Fascist dictatorship and was on the verge of a military coup in order to return it to one at any time (yes, this really almost happened).

Nowadays things are different. Forty years on and we find that we Brits are more worldly wise. Foreign travel is nothing we think twice about. We pay the price of a pint of Belgian lager (brewed under licence in Wales) allowing us to be herded onto a 737 to Barcelona or Bratislava for a weekend. We get there and immediately find an Irish pub to get shit-faced on Guinness while watching the Man U game before getting a Big Mac on the way back to our hotel to crash out before a full English in the morning to dissolve the hangover. Like I said, exotic and oh-so-fucking worldly.

As I've alluded to in other blog entries, this was my very first taste of Italian food. As I've also alluded to, I was raised in a house that was hardly an outpost of culinary exploration. Bolognaise in my family went through various incarnations as I grew up though, in fairness, many of them were actually quite tasty if not authentically Bolognaise. For example, baked beans don't really grow on trees in the fair city of Bologna, but did find their way into some of my parents' incarnations of this ragout but made for a reasonably palatable dinner. My version is a bit more authentic and certainly doesn't have baked fucking beans in it.

INGREDIENTS
500g beef mince (or vegetarian mince if you are so inclined)
2 tbsp olive oil
1 large onion, finely chopped
1 stick celery, finey chopped
1medium carrot, finely chopped
4 large cloves of garlic, crushed
250g mushrooms, coarsely chopped
2 tins of tomatoes (or replace 1 tin with a 500g carton of pasata)
2 table spoons of tomato puree
1 tsp mixed, dried herbs
1 bay leaf
1 tsp paprika
Freshly ground black pepper to taste
1 beef stock cube
150ml red wine
2 tsp balsamic vinegar
2 tsp Worcester sauce
Dash of Tabasco sauce (optional)
2 tsp dark soy sauce

RECIPE

Carrot, celery, garlic, onion and mushrooms.

In a heavy saucepan dry-fry the mince to brown it for about 5 minutes (essentially until it's cooked), making sure it's well broken up with no lumps, and pour it into a sieve to get rid of the excess fat.

To the empty pan add the olive oil and heat on medium before adding the onion and garlic to fry for 5 minutes.

Throw in the celery and carrot and gently cook for 10 more minutes, ong enough to soften, then add the mushrooms for another 5 minutes until they look cooked.

Return the cooked mince to the pan and add the tomatoes, breaking them up (or use chopped tinned tomatoes), before stirring well and adding the herbs, bay leaf, paprika, black pepper and mix well.

Crumble the stock cube in and squirt in the tomato puree, again stirring well.

Pour in the wine, balsamic vinegar, Worcester sauce and (if you're using it) Tabasco.

Stir well, bring to the boil then turn down the heat to simmer with the lid on for at least an hour, ideally two or more.

Keep checking intermittently and stirring. Leave the lid off for a while if the sauce is too liquid.

This recipe makes plenty for four adults.
Serve with pasta (well, duh!) and bread

NOTES
As a pasta sauce this needs to be nice and smooth, so the onions, carrot and celery need to be finely chopped. Also, make sure the mince is nicely broken up when frying it. The mushrooms add a bit of texture so need to be chopped larger. It's actually a good way to hide vegetables if you have a sprog with an aversion to culinary plant matter.

Using pasata instead of a tin of tomatoes makes a more smooth, almost creamy texture. Tinned tomatoes are cheaper though

Tabasco adds a bit of subtle piquancy so don't use too much. It's not supposed to be "spicy". On the other hand, my piquant might leave some chilli-dodgers with steam blowing out of their ears. These things are relative so leave it out if you or your guest(s) are effete.

Pasta for this is traditionally spaghetti, but in the Sweary household we tend to use something that takes less cutlery skill to eat, like penne or fusilli, mainly because Mrs Sweary can't eat spaghetti without looking like an extra from True Blood when she's finished (see picture for an idea of what I mean).

Hyderbadi black pepper chicken

Spices are incredible things. Seeds, fruits, roots, even tree bark. They generally look, at best, unimpressive and at worst just plain fucking nasty. Take the star anise. It looks like a brown shuriken but adds the subtle aniseed flavour to Chinese cuisine. Cloves look like rusty nails but they also give the heady, numbing aroma to mulled wine. Worst of all is root ginger which looks like Boris Johnson but is an integral flavour as part of Indian and Chinese food. and of course in sweet recipes like ginger biscuits and cakes. Without spices food would be just so dull.

I could go off on a tangent and twat on about how some spices are important in traditional Chinese, Ayuvedic and other historic mystical system of pseudo-medicine and they can cure all sorts of shit but if you're a regular follower of this blog you'll know I don't subscribe to any of that new age bollocks. True, herbs and spices, like any natural products from animals or plants, contain all manner of substances which may have beneficial effects and there is a lot of good research underway to look into these possibilities. Sometimes the effects aren't necessarily beneficial. For example, I could mention how capsaicin, the component that makes chilli hot, is actually neurotoxic, how you can actually get high on nutmeg if you eat enough of it and if you eat too many poppy seeds you can test positive for heroin at roadside drugs tests. Indeed the "poppy seed defence" is a well known in legal circles when people have claimed that their positive drug test was due to eating a poppy seed bagel rather than being off their tits on smack.

Anyway, onto the recipe in hand. If you've read a few of these entries you'll know I really love my spices. Most of these dishes have a good measure of spice, especially chilli.This doesn't have so much as a whisper of chilli in it. It isn't actually a curry. Yes, it's Indian. Yes, it's got some spice content. Yes, it's actually hot in a spicy way, but it's not really a curry. No coriander, no cumin, no aromatic spices, no chilli. I ranted about what made a curry in one of my previous entries but this doesn't fall into that category because it's only got tumeric, ginger, garlic and black pepper. Lots and lots of black pepper.

I have to say that this dish is probably one of the tastiest things I have ever cooked. The combination of black pepper, vinegar, ginger, garlic and onion is actually quite magical.

INGREDIENTS
2 tsp ginger-garlic paste
1 tsp salt
4 tsp crushed back peppercorns
2 tbsp white wine vinegar
1 tsp ground tumeric
3 tbsp vegetable oil
500g chicken fillet, diced
1 onion, puréed
1 onion, sliced

RECIPE
Mix the garlic-ginger paste with 1 tsp of the black pepper, all of the tumeric and vinegar and 2 tsp of the oil.

Add the chicken and stir, ensuring it's well coated, before putting in the fridge to marinate for 2-3 hours.

Add the remaining oil to a pan, and the rest of the black pepper then fry for a few seconds before adding the sliced onion. Sauté this until soft then add the puréed onion and fry until it starts to gain some colour.

Add the marinated chicken along with any liquid from the marinade and gently cook the chicken through. How long this takes obviously depends in what form the chicken is. For this entry I used diced chicken breast which took 15-20 minutes, though other times I've used chicken on the bone which is in bigger pieces and so takes longer, but I'll come onto that in the notes.



Makes enough for two adults served with rice or an Indian bread, plus maybe a vegetable curry to make a more complete meal



NOTES
Garlic-ginger paste is exactly as it's described: mushed up garlic cloves and fresh ginger. I pounded it into a paste in a pestle and mortar, but you could use a small hand blender. If you don't have either you could get away with crushing the garlic and grating the ginger then mashing it up further with the back of a spoon. Two teaspoons is about 2-3 cloves of garlic and a small thumb-sized piece of root ginger. The actual amount you need isn't actually that critical, as long as there's enough to coat the chicken as part of the marinade.

The original recipe for this was from celeb chef Atul Korcher and uses a whole chicken cut into 8 pieces. That's shit-loads more chicken than I needed since I made this for two people. Also, the original cooking method is a bit of a pain in the arse with on-the-bone chicken plus originally the recipe used 100ml oil which is way too much though makes cooking larger chicken pieces easier but makes the dish greasier than a Tory MP who fell in an oil slick while lubing himself up to participate in an orgy.

Using diced chicken may lose out on flavour of bone-in chicken, but it's so much easier to make as the chicken really needs to be rubbed with the marinade if it's in big, bony lumps.
